The sun peeks through my blinds as I glance at the time on my phone. Without an alarm imposing a time and place to be, I close my eyes for a few more minutes, or so it seems. I can hear my daughter playing in her room and it won’t be long until her brother follows suit. This is what I’ll miss about summer…the sleeping in and unhurried approach to the start of a new day. Very soon, the first school bell will ring and we’ll be back to a routine that’s scheduled and mostly inflexible. I’m already thinking about backpacks and tennis shoes and what I can feasibly make for breakfast in the short amount of time we have each day.
Cereal is one of my breakfast staples, particularly on mornings when we just can’t get it together. But I really prefer something with a little more substance. Lately we’ve been eating granola for breakfast, and combined with a2 milk®, makes for a heartier, more nutrient-rich breakfast.
If you’ve ever purchased granola, you likely know that it can be high in calories, fat and sugar depending on the brand and variety. At its most basic form, granola simply consists of rolled oats, nuts/seeds, dried fruit, sugar/sweetener, oil, and any spices you desire. It all gets tossed together and baked in the oven and the result is crunchy, toasted granola goodness.
If you want more control over the ingredients in your granola or are looking to save some money, try making homemade granola. Here is my recipe for a Homemade Blueberry Flax Granola.
- 2 cups rolled oats
- 3/4 cup pecans
- 1/4 cup pepitas
- 2 T flaxseed
- 1/4 cup sunflower oil
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup dried blueberries

Preheat oven to 350°F

Line a baking sheet with wax paper

Combine rolled oats, pecans, pepitas and flaxseed in a large bowl

Combine sunflower oil, maple syrup and vanilla extract and pour over oat mixture, Toss and ensure entire mixture is coated well

Spread mixture evenly onto wax paper

Bake at 350°F for 18-20 minutes, stirring once halfway through cook time

Allow to cool

Mix in dried blueberries

Serve with milk
One of the many things I love about homemade granola, apart from how easy it is to make, is the endless possible variations. I also like the ability to control the amount of salt, sweetener, oil, etc. The process is simple and doesn’t take much time, and you can save money by making the granola at home. We always consume cereal or drink a glass of milk with breakfast, so I decided to serve this homemade granola with a2 Milk® since my son and I often experience discomfort after consuming milk. I love that our entire family can drink a2 Milk® for breakfast and other meals, or use it in our favorite recipes that call for milk.
This Blueberry Flax Granola is the perfect back-to-school breakfast recipe. Prepare a batch large enough to last a week, then store it in Mason Jars until you’re ready to eat it. Pour a glass of a2 Milk® over it, or consume the granola as a snack with a glass of milk.
