Each year, my husband and I rotate where we spend the holidays. Because my extended family is more spread out, our holiday celebrations are intimate and we aren’t a stickler when it comes to tradition. On the contrary, my husband’s extended family is generally located in the same part of the country and their celebrations are always large with an emphasis on upholding traditions. Food is an integral part of both celebrations however, I always look forward to spending Thanksgiving here at home because I have more freedom to experiment with the menu and the dishes.
This year, I decided to take a somewhat gourmet approach to traditional mashed potatoes with this Mashed Potatoes with Roasted Garlic and Smoked Mozzarella.
Ingredients:
5 medium-sized red potatoes, peeled and diced.
3 T. salted butter
1/2 cup half and half
5 cloves of garlic
1/4 to 1/2 cup of smoked mozarella
Directions:
1. Roast the garlic in some olive oil and set aside to cool. Use garlic press to crush.
2. Boil the red potatoes until soft. Drain.
3. Using a stand mixer, combine butter, half and half, roasted garlic, and mozzarella and mix until smooth.
These potatoes compliment a turkey dinner nicely and add a gourmet touch to your Thanksgiving meal.
