One of my daughter’s all-time favorite “You Tubers” is Rosanna Pansino, aka “Ro,” who created a fun and engaging cooking show called Nerdy Nummies. My daughter has been in the kitchen with me since she was a toddler and her love for baking in particular continues to grow. You’ll often find her at my side measuring and mixing as I prepare meals…my own little sous chef!
With Easter just a few weeks away, we’re busy prepping meal and snack ideas to celebrate with family. So many of the dishes I enjoy creating are time and labor-intensive, so I thought I’d give us all a bit of a break by incorporating a simple, no-bake dessert that even my kids can put together.
My kids love this time of year for a myriad of reasons, not the least of which includes their opportunity to enjoy treats like Peeps. But our little “chicks” needed a “nesting” place, so we picked up 2 packages of Snack Packs Pudding Cups in Chocolate and Vanilla along with a bag of pretzels, some chocolate chips, and Cadbury Mini Eggs. Not surprisingly, these Easter Chick Pudding Cups With Edible Chocolate Pretzel Nests were a hit with my kids and they started dreaming up new ideas their Peeps homes.
Our initial idea was simple…take 1 Snack Pack Pudding Cup, layer pretzel sticks (cut in half) on top of the pudding in a “nest-like” formation, add a few “eggs,” and set our “chick” on top. But then I started thinking about how to make a proper nest. Since chocolate and pretzels go hand-in-hand, I decided to melt a handful of chocolate chips, then cover the pretzel sticks with the melted chocolate.
Edible Chocolate Pretzel Nests:
- Melt 6 ounces of chocolate chips over a double boiler. If you decide to use the microwave, be sure to heat slowly on 50% power and stir every 15-30 seconds. If you overheat chocolate it will become thick, clumpy, and unworkable. Remember not to allow even one drop of water to come in contact with the chocolate as it will also become grainy and unworkable.
- Gently stir in 1 cup of pretzel sticks, broken in half. Make sure pretzel sticks are covered completely with chocolate.
- Working quickly, “form” your nests and allow them to set on a baking sheet lined with wax paper.
- Refrigerate for 10-15 minutes, or until the chocolate has hardened.
Easter Chick Pudding Cups
To assemble your Easter Chick Pudding Cup, simply set one chocolate pretzel nest on top of the pudding. Add 2-3 Cadbury Mini Eggs and 1 Peep and your snack is complete! With Snack Pack Pudding Cups new EZ open lid so even my youngest can make her own pudding cup with very little assistance.
Both of my kids found this to be a fun, easy recipe/craft hybrid that they could complete quickly without a lot of effort. And the best part was that they could enjoy their “snack” immediately.
