Most days during the week, you’ll find me at my local coffee shop laptop in tow, editing photographs, writing stories, or dreaming up our next adventure. Getting out of the house provides a change of scenery and breathes inspiration beyond the four walls of my home. I can get so engrossed in my creativity, that the lunch hour comes and gos before I’ve even thought about where to grab a quick bite. One of my favorite go-to spots for breakfast and lunch is Corner Bakery Cafe. Their salads are hearty and vegetarian friendly and breakfast is a mix of healthy and inventive with a nod to Southern California. Corner Bakery Cafe
Located in 26 states and Washington D.C., Corner Bakery is known for their quaint, cafe dining experience with an emphasis on seasonal menus. Breakfast, lunch, and dinner items are made-to-order and dishes include grilled paninis, fresh salads, sandwiches, and sweets. Additionally, the venue offers its widely popular catering service with made-to-order dishes for any occasion.

Summer Menu at Corner Bakery
This summer, Corner Bakery is offering three new dishes including their Strawberry Lemon Pancakes for breakfast, their Caprese Panini for lunch, and their Pasta Primavera for lunch or dinner. The restaurant also brought back their Berry Pecan Salad for the summer. Each dish features fresh, seasonal fruits and vegetables.
- Strawberry Lemon Pancakes: The cafe serves up four fluffy buttermilk pancakes topped with fresh strawberries, zesty lemon curd, whipped cream and vanilla maple syrup. Bacon can be added for an additional charge. I love ordering this dish with one of the scramblers and splitting the two dishes with a friend.
- Caprese Panini: This vegetarian-friendly dish features fresh mozzarella, roasted red peppers, Roma tomatoes, arugula, basil, and balsamic vinaigrette on sourdough bread which is then grilled. You can opt to choose two items and enjoy a half of this panini with a salad, soup, or pasta.
- Pasta Primavera: Hearty and creamy, this dish features Cavatappi pasta, a roasted vegetable medley, bruschetta tomatoes, spinach, and roasted red peppers which are then tossed in a light cream sauce. This dish is vegetarian-friendly, however, you can opt to add chicken for an additional charge.
- Berry Pecan Salad: This fresh salad exudes summer! It features all-natural chicken, strawberries, blueberries, blue cheese, and candied pecans served on a bed of greens with a strawberry vinaigrette. Omit the chicken if you follow a vegetarian diet.
