As a young girl, I often frequented a restaurant that served warm chocolate chip cookies topped with ice cream. The combination was divine and deliciously simple. Over the years, many have tried to re-create the concept, most notably through the Chocolate Chip Cookie Ice Cream Sandwich. Add your favorite toppings and you have the perfect summer treat.
I don’t think there are many desserts that can top a warm chocolate chip cookie straight out of the oven, and when I have time, I do enjoy baking a longstanding favorite recipe from scratch. But on days when we’re in need of a quick cookie fix, Pillsbury’s Purely Simple Chocolate Chip Cookie Mix satisfies our sweet cravings! Comprised of ingredients you’ll find in your own kitchen, the new Purely Simple line is free from colors, preservatives or artificial flavors. At present, you’ll find cake, frosting, brownie and cookie mixes, and my hope is that Pillsbury will expand the line to include a diverse assortment of flavors and mixes to make baked goods (Cinnamon Rolls anyone?).
I first baked up a batch of these cookies over the weekend, but with the warm weather we’ve been having, I decided that they weren’t complete without a scoop of ice cream. These Chocolate Chip Cookie Ice Cream Sandwiches are absolutely decadent and the best part is you can customize them any way you want. Simply pick out your favorite ice cream flavors and toppings, and whip up a batch (or 2!).
- 1 package Pillsbury Purely Simple Chocolate Chip Cookie Mix
- 1/2 cup butter softened
- 1 egg
- Ice cream in the varieties of your choice
- Chocolate chips sprinkles, nuts, coconut

Preheat oven to 375 F

Combine cookie mix with butter and egg in a medium-sized bowl

Use a round cookie cutter to shape dough into circles

Place cookies on ungreased baking sheet

Bake cookies for 8-9 minutes until center is set. Do not overbake

Allow cookies to cool completely

Place half of the cookies flat side up

Spoon ice cream onto cookies

Top with remaining cookies, flat side down

Freeze for 3 hours or until ice cream is firm

Roll edges of ice cream sandwiches in chocolate chips, sprinkles, nuts, or coconut

Freeze until ready to serve
While this recipe is simple and nearly impossible to get wrong, I have some tips that will ensure Chocolate Chip Cookie Ice Cream Sandwich Success!
- Don’t over-bake your cookies. I generally prefer a softer cookie, and once you’ve taken these out of the oven, they will continue to cook a bit longer on the baking sheet. If your cookies are over-baked, they will crumble when you attempt to put together your Ice Cream Sandwiches.
- Allow your cookies to cool completely before topping with ice cream, or you’ll have a melted mess (albeit a delicious one).
- Freeze your ice cream sandwiches immediately because irrespective of temperature, your ice cream will begin to melt immediately because of the warmth in your hands. Handle with care.
- Once you’ve rolled your ice cream sandwiches in your favorite toppings, either enjoy immediately or wrap and freeze to enjoy later.
- If you’re hosting a get-together, you can opt to display an ice cream sandwich bar where guests can select the type of cookie and ice cream they want paired together and then roll them in a variety of toppings.
