Halloween and the celebrations that precede it have become almost as expansive as Christmas! We’ve been celebrating all month long with visits to our local pumpkin patch, trick-or-treating with our favorite characters, and baking up an abundance of spooktacular Fall treats. I love this time of year because it’s when I spend the most time in the kitchen with my kids getting creative and a little bit messy!
If I could sum up Halloween in 3 words it would include trick-or-treating, pumpkins, and parties! And since we have parties lined up all the way until the holiday, I thought I’d share an easy recipe that looks fantastic and tastes amazing!
Cupcakes are a staple Halloween Party treat, but since I always like to think outside of the box, I thought I’d use Pillsbury’s Funfetti Neon Yellow and Orange All Star Cupcake & Cake Mix to create Candy Corn-inspired Whoopie Pies! If you’ve never had a whoopie pie, you’ll love how easy this 6-ingredient recipe is.
Whoopie pies originated in New England and the number of variations is endless. Traditionally, whoopie pies were made by sandwiching a sweet creamy filling (commonly frosting) in between 2 round pieces of chocolate cake. Through my years of travel and food experiences, I’ve seen whoopie pies made with nearly every flavor and color of the rainbow and often adorned with sprinkles, mini chocolate chips, and nuts. Since we’re in the midst of the Fall season and candy corn is one of our favorite candies, I thought I’d use the infamous sweet treats vibrant colors to make Candy Corn Whoopie Pies!
This recipe is simple and can be made in about an hour and you’ll likely have most of the ingredients needed in your kitchen. Be sure to visit Walmart’s centrally located Holiday Baking section to pick up Pillsbury’s Funfetti Cupcake & Cake Mixes and any other items you may need.
- 1 package of Pillsbury Funfetti Orange All Star Cupcake & Cake Mix
- 1 package of Pillsbury Funfetti Neon Yellow Cupcake & Cake Mix
- 2 eggs
- 1/2 cup oil I like to use Sunflower or Coconut oil
- 1 1/3 cup water
- 1 container of Funfetti Vanilla Frosting
- 8 ounces of cream cheese
- Optional: Toppings can include mini chocolate chips M&Ms, nuts and sprinkles

Pre-heat oven to 350° F

Line cookie sheets with parchment paper

Prepare each cake mix. Beat 1 package of cake mix with 1 egg, 2/3 cup water and 1/4 cup oil on medium speed for 2 minutes.

Drop batter on prepared cookie sheets (for mini whoopie pies use 1 tablespoon, for larger whoopie pies use 2 tablespoons)

Spread batter into circles allowing at least 2 inches in between each pie (they will expand)

Bake at 350° F for 9 minutes or until center of each cake is set

Allow to cool completely before assembling whoopie pies

Beat cream cheese until light and fluffy with an electric mixer or a stand mixer

Add frosting and mix until blended

Place yellow pies flat side up and spread 1-2 tablespoons of frosting in the center of each one

Top with orange pies and press gently to spread filling to edges

Roll each pie in desired topping

Refrigerate any remaining pies
I was pleasantly surprise at how easy (and fun) this recipe was to make for the holiday. Since this was our first time making whoopie pies, I thought I’d share some tips we learned during the process.
- Use a parchment-lined muffin tin to ensure each cake is the same size
- Be sure to allow cakes to cook completely. If they are slightly undercooked, the cake will be too moist and difficult to handle during the assembly of the whoopie pies
- Before baking the cakes, prepare the frosting and refrigerate it during the baking process. This frosting is relatively easy to work with but I found that it was a bit easier to roll pies in the toppings when the frosting was just a bit firmer.
- Allow the cakes to cool completely or you’ll find that the frosting will melt
Overall, we had a lot of fun making these Candy Corn-Inspired Whoopie Pies and are already dreaming up Christmas combinations!
To complete our DIY Whoopie Pie Party, I decided to brew some Starbucks coffee and pair it with International Delight’s seasonal Pumpkin Pie Spice Creamer. If you are a fan of your local coffee shop’s seasonal Pumpkin-inspired drinks, you’ll find that this creamer is a tasty (and affordable) alternative, particularly when entertaining guests.
All of the decor items we used including the tablecloth, centerpiece, and Jack-O-Lantern Votive Candleholders were purchased at my local Walmart. In line with the “sweet treat” theme of our party, I also decorated the table with Brach’s Autumn Mix which includes Pumpkins, Candy Corn, and Indian Corn.
