Bumble Bee Quick n’ Easy Recipe Contest + A *Giveaway*

This giveaway is now closed. Congrats to the winners SusanLanai and Jammie!

Last year, Bumble Bee Foods, Chef Scott Leibfried, and the Bee Squad hosted an event in New York City, complete with gourmet foods created by the Hell’s Kitchen chef himself.  This year, the brand opted for a more intimate dinner with the team and despite the fact that we didn’t host a party, we still had an opportunity to chat with Chef Scott about his relationship with Bumble Bee Foods and his role in developing recipes and webisodes.

Earlier this week, the brand launched a recipe contest on their Facebook page that you might be interested in checking out.  If you submit a recipe using a Bumble Bee product, you’ll be entered to win a trip for two to Santa Barbara complete with a cooking lesson from Chef Scott Leibfried (I SOO want to enter!).

To enter you’ll need to “like” their Facebook page and share an original recipe. The entry period for submissions closes on September 5th, 2011, voting closes on the 20th, and winners will be announced on the 30th.  Fans will vote for the top 10 recipes and the Grand Prize winner will be selected from among those 10 by Chef Scott Leibfried.

Here is a quick summary of the prizes:

Grand Prize

A trip for two to Santa Barbara Nov. 11-13, 2011, including round trip travel, a two-night stay at Hotel Oceana, a meal at Arch Rock Fish and a cooking lesson with Chef Scott Leibfried.

Runners Up

Two 1st Prizes will be awarded with each winner receiving an apron, a basket of Bumble Bee products, and a Bed Bath & Beyond $100 gift certificate.
Five 2nd Prizes will be awarded with each winner receiving a basket of Bumble Bee products.

    I’m allergic to fish and seafood, but hubby loves them so I learned to cook them. Right now, his favorite recipe is New England Crab Cakes so it’s my favorite as well. But FYI, if you’re on a budget (and who isn’t, in today’s economy?), you can get really good results if you substitute tuna for crab. Just sayin’!

    I am pretty simple. I just love old-fashioned tuna salad sandwiches . . . and I am pretty flexible about what seasonings and extras can go in the salad (like celery, or onion, etc)

    Seriously, this recipe is awesome:

    Ingredients:
    3/4 cup grated Parmesan cheese
    1/2 cup butter or margarine, softened
    3 Tablespoons mayonnaise
    2 Tablespoons chopped green onions
    2 teaspoons chopped fresh chives
    6 grouper fillets (8 ounces each, about one inch thick)
    1/4 cup lemon juice
    1/4 teaspoon pepper

    Combine cheese, margarine, mayonnaise, green onions, and chives in a small bowl; stir well, and set aside. Place fillets on a lightly greased rack in a broiler pan. Drizzle lemon juice over fillets; sprinkle with pepper. Broil 6 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork. Remove from oven; spread tops of fillets with cheese mixture. Broil an additional 2 minutes or until cheese is lightly browned and bubbly. Remove fillets to a serving platter.

    I make a super simple shrimp pasta. Just choose your favorite pasta style and cook it. Then add a little olive oil, fresh basil, fresh parmesan, and some shrimp. Super easy and delicious!
