Breakfast For Dinner: Spinach Feta Bake

It’s 8 pm and I’m eating a bowl of cereal with almond milk…by choice. Breakfast for dinner is a common occurrence in our household, since it’s my favorite meal of the day. It used to be that mornings were more leisurely and we had time for lavish breakfast meals. These days, we’re doing good if my kids have eaten breakfast AND we’re out of the house on time.

The weekends are my opportunity to get creative with breakfast. My son loves muffins and pancakes, and I particularly love omelets and egg dishes.  But since that is really the only time we have for a more involved meal, sometimes I’ll make breakfast for dinner!

Apparently “brinner” is more common than I thought, given it’s place in the Urban Dictionary. Inspired by some of Kellogg’s recipes, I re-created their Spinach Feta Bake with my own personal substitutions.

 

Spinach Feta Bake

Spinach Feta Bake
Ingredients
  • 1/2 cup chopped onion
  • 3 cloves of garlic minced
  • 2 10 ounce packages of frozen spinach thawed and drained
  • 1 cup of shredded carrot
  • 1 cup low fat ricotta cheese
  • 1 cup of crumbled feta cheese
  • 2 eggs
  • 1/4 cup shredded Parmesan cheese
  • 2 teaspoons dried oregano
  • 1/2 teaspoon coarse ground black pepper
  • 1 1/2 cups Kellogg's All-Bran Complete Wheat Flakes crushed to 3/4 cup,
Instructions
  1. Sauté onion and garlic in olive oil until tender (do not brrown)
  2. In a medium bowl, combine onion mixture, spinach, carrots, cheeses, eggs, 1/2 cup crushed cereal, and spices
  3. Spoon mixture into a casserole dish coated with nonstick cooking spray
  4. Sprinkle remaining 1/4 cup of cereal over dish
  5. Bake at 350 for 50 minutes or until a knife inserted into the center of the dish comes out clean

This quiche-like dish is hearty in veggies with just the right amount of crunch. You can substitute egg whites and low fat cheeses to lower the fat, cholesterol, and caloric content of the dish.

    This looks delicious. Yes we are big fans of breakfast for dinner in my household. Loved it when I was a kid too.
