Father’s Day Shortbread Bow Tie Cookies

As a young girl, you’d often find me in the kitchen alongside my dad as he prepared from-scratch meals with recipes passed down from his own family. We talked about boys and cars and my dreams of traveling the world over rice pilaf, homemade chili and fruit cake. Most of my childhood memories are jarred by photos of fishing trips, camping on Lake Cachuma, and Disneyland. What I remember most were those times when we baked cookies from scratch, put together a Pinewood Derby Car and crafted a replica of the world out of styrofoam.

With Father’s Day just one month away, my kids have been brainstorming ways to celebrate their dad. Handwritten cards and DIY gifts are their mainstay, but with my kids affinity towards the culinary arts, we decided to celebrate dad with a tutorial for Father’s Day Shortbread Bow Tie Cookies. This no-bake activity is easy enough for kids to do with minimal supervision and can be put together in under one hour.

Bow Tie Cookie Ingredients

Father’s Day Shortbread Bow Tie Cookies

Supplies:

  1. Walkers Shortbread Triangles
  2. Walkers Shortbread Rounds
  3. Wilton Sparkle Gel
  4. Wilton Decorating Icing
  5. Edible Glue

Decorating Bow Tie Cookies

Directions:

  1. Use the edible glue to attach two shortbread triangles together. Allow to dry.
  2. Outline shortbread triangles with sparkle gel
  3. Fill in shortbread triangles with sparkle gel or colored decorating icing*
  4. Allow shortbread triangles to dry
  5. Attach shortbread round to shortbread triangles with edible glue
  6. Outline shortbread round with sparkle gel
  7. Fill in shortbread round with sparkle gel or decorating icing
  8. Allow shortbread round to dry
  9. Decorate bow tie cookies with colored sparkle gel or decorating icing (i.e. dab dots)
  10. Allow cookies to dry completely before handling

Bow Tie Cookie

*Note* In order to use decorating icing as a fill for the shortbread cookies, thin with water and 1/4 teaspoon of cream of tartar, which speeds the drying process and stabilizes the icing. You can use this thinned icing to fill the cookies after outlining them or to create the dots during decorating. To determine if the icing is thin enough, drizzle a spoonful into the bowl. If the line of icing takes longer than 3 seconds to disappear, it is too thick.

While I stuck with a polka dot theme, feel free to personalize your cookies with stripes or other designs. Mix and match your favorite colors or select colors that best reflect dad. Once your bow tie cookies have been assembled and decorated, you can wrap them in cellophane with a bow and gift to dad for Father’s Day.
