We’re in the home stretch, and with projects and spelling bees now out of the way, we’ve been relaxing our schedule in anticipation of summer. Night swims, beach days, summer reading and ice cream before dinner are just some of the many ways we’ll celebrate our favorite time of the year. And while some of our adventures will take us to places not yet seen, we’ll also have just as much fun exploring our city and getting creative with new summer recipes.
Ice cream has always been one of our favorite summer treats, and while perfectly enjoyable as is, we love to get creative with our favorite frozen treat. During my latest visit to ALDI, I picked up a package of Specially Selected Anise Pizzelle Cookies and 2 containers of Specially Selected Ice Cream in Belgian Dark Chocolate and Sea Salt Caramel Truffle. You could easily use these 2 ingredients to make Ice Cream Sandwiches. But we found that if you warmed the cookie, you can mold these Pizzelle Cookies into your desired shape. Here is a quick recipe and demonstration of how to make Ice Cream Tacos.
- 4 Specially Selected Anise Pizzelle Cookies
- 2 cups of Specially Selected Ice Cream in the flavors of your choice
- Toppings chocolate shavings, crushed pistachios, shaved coconut

Heat each Pizzelle Cookie in the microwave for 45 seconds

Shape each cookie immediately into a taco using care during handling as the cookie will be hot

Scoop 1/2 cup of ice cream into each taco

Top with desired toppings

Serve immediately
This is an easy Summer Treat your kids will enjoy and can be personalized to include your family’s favorite toppings. We chose dark chocolate chips/shavings, crushed pistachios and shaved coconut, but you could easily include sprinkles, chocolate syrup, whipped cream, fruit, or any other topping you can dream up.
Pizzelle Cookies are a simple, traditional Italian waffle cookie with a delicate, sweet flavor. The varieties sold at ALDI are flavored with anise or vanilla and crispy. One of the main reasons why I initially picked out these cookies is the fact that the ingredient list is short, comprised of items I’d find in my own kitchen. This is consistent with the brand’s commitment to offer foods free from synthetic colors, partially hydrogenated oils and MSG and can be seen in their exclusive lines including their organic SimplyNature® line.
While the grocery chain has been around since the early 1900s, ALDI stores didn’t open in the US until 1976 and are just now coming to Southern California.
