Confession! I have a love-hate relationship with leftovers. I love the convenience of not having to cook on a school night when my kids are famished from swim, have homework to do, and I’ve forgotten to go to the grocery store. It’s the actual “leftovers” that I typically despise. Have you ever had leftover salmon (can you say dry?)…or pancakes (never as fluffy)…or a day-old sandwich (soggy!)? It’s been said that many foods taste better with age, but those foods are few and far between when it comes to my palate. I’ve just spent practically the entire week in the kitchen, and I can assure you that the very last thing I want to do is cook one more meal. Which leads me to my latest recipe!
Traditional Christmas Leftovers typically include ham or turkey, vegetables, stuffing, cranberry sauce, and mashed potatoes and you’ll often find them revived as soups, salads, sandwiches, and pies. But if this gal is going to eat leftovers, I don’t want them to taste like leftovers. I want them to be transformed into a brand new, equally delicious dish, which is why I decided to use my leftover mashed potatoes to make the most incredible mascarpone mashed potato waffles I have ever tasted! This recipe is super easy, will make your house come alive with the smell of all-things savory and you will have to question whether or not you’re really eating leftovers.
Everything you’ll need for this Leftover Mascarpone Mashed Potato Waffles Recipe can be found at your local Walmart. And if you don’t happen to have leftover mashed potatoes, this recipe is worth whipping up a quick batch for!
- 1/2 cup flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp pepper
- 1/2 tsp salt
- 2 cups mascarpone mashed potatoes
- 2 eggs
- 1/4 cup buttermilk
- 2 T mascarpone
- 2 T butter softened
- 2 cloves of garlic minced
- 1/4 cup scallions diced

Combine dry ingredients in a medium-sized bowl

In a separate bow, beat eggs into mashed potatoes

Fold in dry ingredients

Add buttermilk, mascarpone and butter and mix until combined

Fold in minced garlic and scallions

Preheat waffle iron

Cook waffles according to your waffle maker's instructions

Serve with mascarpone and fresh scallions
