In the midst of a busy week filled with swim, sports, homework, and broken arms, I constantly find myself fighting against time. I’m so passionate about feeding my family wholesome meals made with real foods, that I often find myself spending too much time in the kitchen at the expense of other, more pressing things to do. The crockpot has been a huge timesaver for dinner, but breakfast typically consists of no more than cereal or frozen organic pancakes, fresh fruit, and eggs if I’ve managed to budget my time effectively.
The struggle to get meals on the table is a shared one amongst my friends in all of life’s stages. Whether it’s a job that requires long hours into the evening, or a commute that requires leaving the house before sunrise, there is a consistent need for Simple Meals that can be prepared with a minimal ingredients in a short amount of time. Beyond that, these meals need to be affordable for families and pleasing to even the youngest of palates.
Recently, Walmart introduced Simple Meals, a collection of time-saving, fuss-free meals that can be prepared with a few ingredients without breaking the bank. What I really like about the site is the inspiration I’m gleaning as ingredients are used in inventive ways. I can tailor these recipes to our family’s taste and dietary preferences while retaining the simple, cost-effective profile of these meals. For example, we’ve added Wild Salmon to their Easy Stir Fry Recipe, hosted a Vegetarian Taco Night, and added fruit and nuts to their Oatmeal Parfait.
Inspired by Walmart’s Breakfast Mix & Match meals, I decided to put together an easy Chilled Swiss Oatmeal Recipe. Having had the opportunity to live in Europe, I still find myself gravitating towards their foods and cooking styles. During my time overseas, what many found as “different” or “interesting” was exciting to me. Breakfast has always been my favorite meal, and walking into a restaurants and hotels where breakfast often consisted of porridge, muesli, fresh breads and artisan spreads awakened my palate to a new way to eat.
Muesli is a common breakfast dish consisting of rolled oats, grains, fresh/dried fruits, and seeds/nuts mixed with milk, yogurt and/or fruit juice. I decided to create my own version by soaking Quaker’s Instant Oatmeal in lowfat milk, then stirring in Muller Greek’s Strawberry Yogurt, sliced almonds and fresh fruit.
- 1 package of Quaker Instant Oatmeal
- 1/4 cup lowfat milk
- 1 container of Muller Greek 100 Strawberry Nonfat Yogurt
- Sliced almonds
- Fresh and/or dried fruit

Soak oats overnight in milk

In the morning, stir in yogurt and fruit

Top with sliced almonds
This Chilled Swiss Oatmeal is delicious, hearty, and very easy to “make,” no cooking required! You can also change it up daily, if you’d like, using different flavors of oatmeal and yogurt and varying the nuts and fruit mixed in. Just like “cooked” oatmeal, you may prefer to add a touch of milk in the morning for a creamier oatmeal (I actually prefer my oatmeal on the drier side).
