One of our guilty weekend pleasures is an expansive gourmet breakfast. These are the few days that I’ll endeavor to make muffins, frittatas, quiche or waffles from scratch. Our day-to-day routine doesn’t allow for the time and effort it takes to prepare these dishes, which is why most days, we stick with hot and cold cereals, milk, and fruit. I’m grateful my kids can get a great start to their day, every day, with a meal that is not only simple and easy to prepare, but packed with the important nutrients they need to grow and develop physically, intellectually, socially, and emotionally.
Since we had a bit of time over the weekend, I was inspired by Kellogg’s cereal-inspired breakfast dishes and put together a lavish, spread which included Baked Cinnamon French Toast, 2 Breakfast Casseroles, and Fruit & Yogurt Parfaits.
Admittedly, I don’t really make French Toast. We are a pancakes and waffles type of family, but the recipe I found via Kellogg’s looked easy, delicious, and features my children’s favorite cereal…Rice Krispies! Here is our adapted recipe:
- 1/3 cup Greek Yogurt
- 1/8 teaspoon vanilla if desired
- 1/2 cup sliced fresh strawberries
- 1/4 cup fresh blueberries
- 1/2 cup sliced peaches
- 1/2 cup Kellogg's® All-Bran® Bran Buds Cereal

In one a 12-ounce glass, alternate layering yogurt, fruit, and cereal

This Baked Cinnamon French Toast will change your perspective on the classic dish. I love the “crunch” on the outside combined with the moist, creamy texture on the inside. We served ours with fresh fruit and powdered sugar, but you can also add a touch of maple syrup if you have a sweet tooth like I do!
My ideal breakfast includes some type of egg dish (the fluffier and cheesier, the better). There are several recipes I considered, but I really liked that this Crunchy Breakfast Casserole from Kellogg’s, could be prepped the night before. I made two different versions, both of which were delicious and distinct in flavor.
- 1/3 cup Greek Yogurt

Variation: Substitute 4 ounces frozen chopped spinach (thawed and drained) for the onions and bell peppers, chevre goat cheese and mozzarella for the sharp cheddar, and omit the chopped parsley.
I first made a version of this dish for our Women’s Bible Study Fellowship and it was eaten so quickly, I barely had a chance to grab a bite. I personally love the added crunch that the Crispix cereal provides. While easy to prepare, you’ll want to plan ahead because this dish needs time for the flavors to meld and the bread to soften and absorb the moisture from the eggs and milk which is what makes this dish so moist and fluffy.
The last dish I prepared for our breakfast was a simple Fruit & Yogurt Parfait. Fresh fruit, Greek Yogurt, and All-Bran Bran Buds Cereal are layered for a colorful, flavorful dish that is light but satisfying.
- 1/3 cup Greek Yogurt

This dish is easy to prepare and personalize. We used Greek Yogurt for the adult versions and almond milk yogurt for our kids’ parfaits. We also incorporated their favorite cereal while we opted for All-Bran. Select your favorite fruit (berries in our household) and you’ll have these parfaits prepped and ready to eat while the other dishes are baking.
While all of the above dishes require more time than a simple bowl of cereal, each can be prepared with a bit of time and planning for a weekend brunch and show just how versatile and exciting cereal can be!
