In just a few days, we’ll observe Three Kings Day (Dia de Reyes), a holiday celebrated by cultures all over the world, particularly those of Latin origin. With it’s roots steeped in Christianity, the celebration commemorates the three wise men’s visit to the baby Jesus. In my culture (Puerto Rico), Three Kings Day is one of the most important holidays and celebrations include parades and festivals with live music, food, and other festive activities.
Through January 6th, 2014 (Three Kings Day), the Disneyland Resort will celebrate this important holiday with crafts, face painting, music, a live street party, and traditional Mexican foods. All of the activities take place at Paradise Garden, which is also home to Boardwalk Pizza and Pasta and Paradise Garden Grill, where many of the traditional dishes will be served. Food is an integral part of our celebrations and the menu at both dining locations does not disappoint. Some of the seasonal offerings integral to the Latin culture include Pozole, Chicken Mole Drumettes, Pescado Veracruzano, Champurrado (Mexican Hot Chocolate), Sweet Tamales, Torta al Pastor, Buñuelos, and Choco Flan. You’ll also find Traditional Rosca de Reyes bread this weekend in honor of Three Kings Day.
Winter is the ideal time to cook up a stew, so in honor of Three Kings Day, watch as Disneyland Resort Chef Toby Hollis demonstrates how to make homemade pozole. Many of the ingredients you’ll likely find in your kitchen making it easy to recreate this recipe at home. While this hearty stew is traditionally made with meat (specifically pork), Chef Toby offers an easy vegetarian option:
