With just a few weeks left of summer, we’ve been enjoying our time together as a family, filling our days with birthday parties, water play, field trips, and other exciting adventures. We love being outdoors, and now that my husband finally set up his grill this summer, we’ve been taking mealtime to our backyard.
Since we really don’t need many reasons to throw a party, my husband decided to grill some shrimp and veggies while I put together two easy, healthy dips for our meal.
Chips and dip are a staple item for outdoor barbecues and picnics, but very often the dips I find in-stores are loaded with fat, calories, and unhealthy ingredients. Whenever I can, I try to replicate store-bought dishes with fresh, healthy ingredients.
To healthify the traditional veggie dip, I created a Greek Yogurt Cheese and blended in some spices and our favorite veggies.
- 8 ounces of Greek yogurt cheese
- 1 clove of garlic
- 1 bunch of green onions chopped
- 1/4 bell pepper chopped
- 1 carrot chopped,
- 1 Persian cucumber chopped
- 1 stalk of celery chopped
- 1/4-1/2 teaspoon Dill
- Juice of 1/2 lemon
- Salt and pepper to taste

To make the Greek yogurt cheese, line a sieve with 6-10 layers of cheesecloth

Place the sieve over a bowl and place 12 ounces of Greek yogurt into the cheesecloth

If the liquid released is thick and white (as opposed to thin and clear), you'll need to add additional layers of cheesecloth

Allow to sit overnight

To make the dip, simply chop all of the veggies in a food processor

Mix 3 tablespoons of fresh veggies, spices, and lemon juice until well combined
As opposed to using sour cream, this fresh veggie dip uses a lower fat/lower calorie Greek yogurt, yet still retains that thick, cream texture I love about veggie dips. Plus, it’s a wonderful way to incorporate a variety of fresh vegetables. If you like your dip a bit thinner, simply adjust the amount of straining time for the Greek yogurt. I paired this dip with Lay’s Classic Potato Chips and they went together nicely.
The second dip I created was Frito-Lay’s Black Bean Corn Bites Dip. Tortilla chips are a favorite in our household, and traditionally we’ve simply served them with a fresh salsa.
This particular recipe also incorporates a variety of fresh ingredients including corn, black beans, avocado, and herbs.
This is a heartier dip and after eating several Tostitos! Scoops filled with this delicious dip, I noticed I was getting full, so go easy! : )
While I enjoyed this dip, I made a few alterations to it which I think worked nicely. First, I cut back on the amount of corn used since I felt like 2 cups overwhelmed the dip. I also increased the amount of avocado because you can never have too much avocado!
While we snacked, the hubby grilled shrimp, steak, and fresh veggies. We served the meal with the dips, chips, and fresh fruit and it was perfect.
