He who has gone, so we but cherish his memory, abides with us, more potent, nay, more present than the living man
– Antoine de Saint-Exupery
It wasn’t until I lost my father last year, that I truly grasped the fragility of life. When people spoke of losing loved ones, it felt far-removed…like something I might experience in the distant future. But there is a knowing that comes with loss…a reverence for the time we have with our loved ones.
When I lost my father, I tried to “forget” what had happened…to put out of my mind what I could not change. But what I realized is that you can’t forget someone you love…nor did I want to. Sometimes it’s my son who will say something he loved about grandpa…or I’ll hear a song my father used to enjoy and I’ll think about him.
While I am not Mexican, I can better understand that need to remember the loved ones they have lost. This week, the Hispanic culture celebrates Día de los Muertos, or Day of the Dead.
In honor of the holiday, a group of us gathered to create some holiday-themed dishes. Not only were many of the dishes culturally-bsed, they were all made with Mazola Corn Oil. Of note, Mazola Corn Oil has more cholesterol-lowering nutrients than olive oil, canola oil or grapeseed oil making it a heart-healthy oil.
Here are the dishes each of the attendees created:
Chicken and Apple Empanadas by LatinoFoodie.
Tinga de Pollo by Mamas Noticias
Ají de Gallina by Notas de Mama
Carne con Papas (Mexican Style) by Papi Blogger
Buñuelos by Living Mi Vida Loca
Día de los Muertos Sugar Cookies by Presley’s Pantry
Pumpkin Fritters by Sassy Mama in LA
Almond Orange Cookies by Comiendo en LA
Pumpkin Chocolate Bread by Rockin’ Mama
I thought it was neat how each of us crafted a unique assortment of dishes including main courses and dessert.
