Recipe: Gingerbread Oreo Cream Cheesecake Bars With a Chocolate Ganache

Every single day for the  past 2 weeks,  I’ve walked into my local coffee shop hoping that the day would finally come when I can warm up with a Gingerbread Latte.  I haven’t thought much about my favorite spice, but more and more I’m realizing how much I enjoy Gingerbread in breads and cakes…pies and cheesecakes…coffees and teas.

Last week, I introduced you to Oreo’s latest cookie delight…their brand new Limited Edition Gingerbread Oreos. After tasting the sweet Ginger infused cream sandwich cookies, I knew exactly how I wanted to incorporate them into my latest recipe.  I’ve been experimenting with cookie crusts, so I thought these golden sweet cookies combined with some unsalted butter would bake nicely as a crust for cheesecake bars. I wondered if the Gingerbread Cream would be too sweet, but when combined with the slight tang of cream cheese, it was perfect.  I could have left these cheesecake bars as is because they were incredible, but since they were looking a bit plain, I decided to top them with a homemade chocolate ganache…because chocolate makes everything taste better right? Here is the recipe!

Chocolate Ganache

Ingredients

• 2 one ounce squares of semis-sweet baking chocolate
• 1/4 cup heavy whipping cream

Instructions

1. Melt chocolate with whipping cream using a double boiler, mixing until smooth
2. Cool slightly and drizzle over cheesecake bars

The combination of the sweet crust, gingerbread cream cheese filling, and chocolate ganache was incredible. While this is definitely a more indulgent recipe, you can cut the bars into small bites and serve at a holiday party. You can also substitute a light cream cheese to cut some of the fat and calories.

The Limited Edition Gingerbread Cream Oreo Sandwich Cookies are now available in the grocery section of your local Walmart.
