Lunch has always been one of our family’s most challenging meals. There isn’t sufficient time to prepare home-cooked meals for my kids’ lunches, so I’m always looking for simple, flavorful solutions that can be put together with just a few hasty minutes in the morning before school. Thankfully, my kids have relatively diverse palates and my persistence when they were young means they eat everything from broccoli and steel cut oatmeal to lentils and salmon.
We are huge fans of tuna, but like most foods, my kids can tire of eating the same thing too many times in one week. Chicken of the Sea just launched a new line of Flavored Salmon Pouches that are game changers when it comes to quick, easy, healthy lunches. Available in BBQ, Lemon Pepper, Sweet & Spicy, as well as a plain variety, these individual-sized pouches come ready to enjoy without having to drain the fish. The pouches are easy enough to open and can be placed inside of my son’s lunch along with a small container of mayonnaise and some crackers. I personally like the idea of having these in my purse or on-hand at home for sandwiches and salads. If you’re feeling creative, try one of Chicken of the Sea’s more gourmet recipes like their Salmon, Lettuce, and Tomato Sandwich, Hearty Potato Leek and Salmon Chowder or their Mediterranean Salmon Pasta.

To celebrate the release of these new flavored Salmon Pouches, I’m sharing a simple, flavorful recipe you can use for snacking, light meals and even entertaining. I’ve recently started using Greek Cream Cheese in place of conventional and it has helped me feel good about a food I often felt was indulgent and relatively devoid of nutrients. My simple, 6 Ingredient Salmon Mousse recipe features Greek Cream Cheese, Chicken of the Sea’s Salmon Pouches, lemon juice, and seasonings.
- 1 2.5 ounce package of pink salmon
- 3 T Greek cream cheese
- 1 tsp of lemon juice
- 1/2 tsp dried dill
- salt and pepper to taste
- Crackers for serving

Combine all ingredients in the food processor until smooth

Spoon salmon mixture into a piping bag (you can also use a plastic bag with the corner cut off) with a #1M decorating tip

Place bag in the refrigerator to chill for 30 minutes

Pipe a small amount of salmon mousse onto the center of each cracker

Garnish with a small sprig of fresh dill, if desired

Serve immediately
This recipe is so easy to prepare and tastes incredible. You can also spread it on bagels for breakfast or cucumbers if you prefer to go carb-free. If you’re planning to entertain guests, you’ll definitely want to double or even triple the recipe. To keep these h’orderves looking beautiful, place them in the freezer for a few minutes before serving.
