With busy schedules and limited time in the evenings, I’m constantly scrambling to get dinner on the table. While I enjoy experimenting on the weekends when I have more time, during the week the goal is a healthy, quick meal that my family is actually going to eat.

You may remember that I spent the summer working on Hellmann’s Club Sandwich campaign.  This Fall, they’ve launched The Hellmann’s Chicken Challenge to help families change up their dinner routine.  Every week on the Hellmann’s site you’ll find two chicken dishes pitted against their popular Parmesan Crusted Chicken dish.  Fans can vote on their favorites and enter to win one of four $250 grocery gift cards.

Earlier this week, I decided to replicate their Parmesan Crusted Chicken dish. Here is the recipe:

Parmesan Crusted Chicken

Prep Time: 10 minutes

4 servings

Cook Time: 20 minutes

1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp. Italian seasoned dry bread crumbs

Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl.

Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.

Bake 20 minutes or until chicken is thoroughly cooked.

 

Timesaving Tip: Try making this dish with thin-cut boneless skinless chicken breasts! Prepare as above, decreasing bake time to 10 minutes or until chicken is thoroughly cooked through.

TIP: Omit Parmesan cheese and have Magically Moist Chicken on table in less than 30 minutes.

I halved the recipe and substituted Ian’s Panko Breadcrumbs.  The dish came out crispy on the outside but moist on the inside. The hubby is not a fan of dried out chicken and the mayonnaise helps to retain the moisture and flavor of the meat. The dish was very easy to prepare and I served it with grilled asparagus and baked potatoes.
