Easy Appetizers With Pillsbury Crescents *Giveaway* Published on Sunday, January 3, 2010 by

This giveaway is now closed.  Thanks for stopping by.  The winner is Kathleen D.  Congrats!

Now that the holidays are over, I’m looking forward to a tiny break when it comes to the kitchen.  While I’m not a huge fan of packaged foods, I do utilize them on occasion.  With two children and a husband who goes back to work this week, I’m on my own!

I have to admit that their are certain foods I’ve been eating since I was a child.  I remember my mother making Pillsbury Crescent Rolls for dinner on many occasions.  There is something about those flaky, buttery biscuits that won’t allow me to eat just one.  And I am perfectly content eating them as is (with a little butter, of course).  However, did you know that you can actually use them for appetizers and meals?  Their website contains several recipes using Pillsbury Crescent Rolls…recipes you and your kids will likely eat.  One of the recipes that stood out to me was their Veggie Pizza recipe.  I selected their Reduced Fat variety to shave some of the fat and calories off and they still tasted really good.

Easy Veggie Pizza
INGREDIENTS

2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8 oz each) Pillsbury® Place ‘n Bake™ refrigerated crescent rounds or Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
1 package (8 oz) cream cheese, softened
1/2 cup sour cream
1 teaspoon dried dill weed
1/8 teaspoon garlic powder
1/2 cup small fresh broccoli florets
1/3 cup quartered cucumber slices
1 plum (Roma) tomato, seeded, chopped
1/4 cup shredded carrot

DIRECTIONS
1. Heat oven to 375°F.
2. If using crescent rolls: Unroll both cans of dough; separate dough into 4 long rectangles. In ungreased 15x10x1-inch pan, place dough; press in bottom and up sides to form crust. If using dough sheets: Unroll both cans of dough. In ungreased 15x10x1-inch pan, place dough; press in bottom and up sides to form crust.
3. Bake 13 to 17 minutes or until golden brown. Cool completely, about 30 minutes.
4. In small bowl, mix cream cheese, sour cream, dill and garlic powder until smooth. Spread over crust. Top with vegetables. Serve immediately, or cover and refrigerate 1 to 2 hours before serving. Cut into 8 rows by 4 rows.

Makes 32 appetizers

I like this recipe because it includes veggies and offers a variation on a meal (pizza) that my son likes and eats.  The site offers recipes for breakfast, dinner, dessert and appetizers.  Here are a few more you might be interested in checking out:

Most of the recipes on the site take about 20 minutes to prepare (plus cooking time).

Win It! One of you will win a Creative Creations prize pack, courtesy of Pillsbury which will include 2 VIP coupons and some serving platters.  Simply leave me a comment with the recipe above you’d like me to re-create (ooh!) and your favorite Pillsbury crescent appetizer creation from the site.  Comments will close on January 17, 2009 at 10 PM PST. One comment per person, please (unless you do the extra credit). US residents only. Duplicates and comments not including the above information will be disqualified. Comments are moderated. I’d like to try the first one on the list! Smoked Salmon Pinwheels!! I LOVE salmon beyond mouth watering words!!!

    Something for you to try??? Oh! I have it!!! You MUST try this:

    It’s from Pampered Chef! We LOVE it!!!

    Chicken Enchilada Ring
    ~~~~~~~~~~~~~~
    2 C. coarsely chopped chicken
    1/4 C. chopped pitted ripe olives
    1 C. shredded Monterey Jack/Cheddar blend
    1 can (4 oz.) chopped green chilies, undrained
    1/2 C. mayonnaise
    1 T. Southwestern Seasoning Mix
    2 plum tomatoes
    1 lime
    2/3 cup finely crushed tortilla chips, divided
    2 pkgs. crescent rolls
    1 C. salsa
    1 C. sour cream
    Preheat oven to 375° F.
    Mix chopped chicken, olives, cheese, green chilies, mayonnaise and seasoning mix in bowl. Seed and chop one tomato. Slice lime in half. Juice one half of lime to measure 1 t. of juice. Reserve remaining lime for garnish. Add chopped tomato and lime juice to chicken mixture. Reserve 2 T. crushed chips and add remaining chips to chicken mixture. Mix well.
    Sprinkle reserved crushed chips over flat side of a large cutting board. Place dough onto chips and press down so chips adhere to dough.
    Separate dough into triangles. Arrange triangles, chip side down, in a circle on a 13″ baking stone. Wide ends should overlap in the center and points should be toward the outside. There should be a 5″ diameter opening in the center.
    Scoop chicken mixture onto the wide ends of the triangles. Bring points of the triangles up over filling and tuck under wide ends. Do not cover filling completely. It should show in between each triangle.
    Bake 20-25 minutes or until golden brown.
    For garnish, cut remaining tomato into 8 wedges. Cut remaining half of lime into 4 slices, cut in half. Arrange between openings of ring where filling is showing. Serve with salsa and sour cream.
