Easy Crockpot Minestrone Soup Recipe
Ingredients
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 1 zucchini diced
  • 1 can of diced tomatoes
  • 1 can of white beans drained
  • 2 T fresh basil
  • 1 tsp dried oregano
  • 2 T Knorr® Tomato with Chicken Flavor Granulated Bouillon
  • salt and pepper to taste
  • 4 cups water
  • 1/2 cup elbow macaroni optional
  • 1/4 cup parmesan cheese grated
Instructions
  1. Combine vegetables, tomatoes, white beans, basil, spices, and water in a slow cooker
  2. Cook on medium for 3-4 hours or until vegetables are soft
  3. Cook pasta al dente, according to package instructions
  4. Optional: Stir cooked pasta into minestrone soup and cook for 10 to 15 minutes
  5. Serve minestrone topped with fresh basil and grated parmesan cheese
