Pumpkin Apple Spice Muffins
Servings: 12 muffins
Ingredients
  • 1 cup of unbleached flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark brown sugar
  • 1/2 cup canned pumpkin
  • 1 egg lightly beaten
  • 1/2 cup buttermilk
  • 1/4 cup melted butter
  • 1/2 teaspoon pure vanilla extract
  • 1 cup apples peeled and chopped
  • Topping:
  • 2 tablespoons unbleached flour
  • 1/4 cup oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons of butter softened
Instructions
  1. Preheat oven to 375 degrees Fahrenheit
  2. Prepare a 12-cup muffin pan with cooking spray or use paper liners
  3. Combine flour, spices, baking soda, salt, and sugar in a bowl
  4. Whisk together pumpkin, egg, buttermilk, melted butter, and vanilla extract in a separate bowl
  5. Add wet ingredients to dry ingredients and mix until combined
  6. Fold in freshly cut chopped apples
  7. Pour mixture into prepared muffin pan, filling each cup completely
  8. Sprinkle topping over each muffin
  9. Bake for 20-25 minutes, or until a toothpick inserted comes out clean
