Crockpot Pumpkin Chili Recipe
Ingredients
  • 1 pound of ground turkey breast
  • 1 medium green bell pepper chopped
  • 1 medium yellow onion chopped
  • 2 cloves of garlic minced
  • 1-2 teaspoons of olive oil
  • 1 can of organic diced tomatoes I use the "no-salt" variety
  • 1 can of white beans or 1/2 cup of dried white beans soaked and cooked
  • 1 can of pumpkin puree
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder optional
  • Salt and pepper to taste
  • Sour cream and chives for garnish
Instructions
  1. Sauté the ground turkey breast in olive oil
  2. Optional Sauté green bell pepper, onion and garlic with ground turkey breast
  3. Prepare dried beans by soaking in filtered water for 6-8 hours and simmering on low-medium heat for 1-2 hours
  4. Combine turkey breast, tomatoes, beans, pumpkin puree, and spices in Crock-Pot
  5. Cook on high for 4 hours or on low for 6-8 hours
  6. Serve with sour cream and fresh, chopped chives
