Potato Skins
Ingredients
  • 6 Russet Potatoes
  • Olive oil
  • Salt and Pepper
Instructions
  1. Preheat oven to 400 °F
  2. Scrub potatoes until clean
  3. Dry
  4. Rub potatoes with olive oil
  5. Place on a baking sheet and bake at 400 °F for 50-60 minutes, or until potatoes are soft
  6. Cool
  7. Slice potatoes lengthwise
  8. Carefully scoop out filling, leaving a layer of potato inside the skin
  9. Drizzle inside and outside of potato skin with olive oil
  10. Season with salt and pepper
  11. Bake potato skins upside-down for approximately 5 minutes or until brown
  12. Using tongs, flip potato skins right-side up for another 3-5 minutes or until brown
  13. Cool before serving
