Potato Leek Soup
Servings: 6 servings
Ingredients
  • 2 pounds potatoes peeled and chopped
  • 3 large leeks cleaned and chopped
  • 1 medium onion chopped
  • 1 tsp garlic minced
  • 1 tbsp olive oil
  • 4 cups vegetable stock
  • 1 bay leaf
  • 1-2 sprigs of fresh thyme
  • salt and pepper to taste
  • chives for garnish
Instructions
  1. Sauté leeks, onion, and garlic in olive oil until soft. Do not brown

  2. Add broth, potatoes, bay leaf and thyme to pot and simmer for 20 minutes, or until the potatoes have cooked through

  3. Remove the bay leaf and thyme. Purée the soup using an immersion blender

  4. Garnish soup with chives, if desired
