Mexican Shrimp Cocktail
Ingredients
  • 1 Avocado
  • 1 Lime
  • 1 TSP - 1 TBSP Canned Green Chiles
  • Water
  • Dash of Salt
  • 1 Avocado diced
  • 1/4 cup Onion diced
  • 1 Tomato diced
  • Diced Cilantro
  • 1/2 pound boiled shrimp chilled
Instructions
  1. Puree 1 Avocado with juice from 1 lime
  2. Add a dash of salt and 1 teaspoon to 1 tablespoon of canned green chiles, depending on how spicy you like your cocktail.
  3. Add a small amount of water to achieve a soup-like consistency
  4. Chill
  5. Combine diced onion, tomato, avocado, and cilantro with the boiled shrimp and the avocado "cocktail."
  6. Stir and serve chilled
