Shrimp Fajitas
Ingredients
  • Marinade:
  • 1 T . Fresh Squeezed Lime Juice
  • 2 T . Fresh Squeezed orange juice
  • 2 cloves garlic peeled and finely chopped
  • 2 tsp . fresh cilantro inely chopped
  • 2 T . Chef Merito Fajitas Seasoning
  • 1 to 1 1/2 pounds of fresh shrimp
  • Fresh veggies suggestions include red and green peppers, onions, chopped
Instructions
  1. Place all marinade ingredients in a plastic bag and coat shrimp thoroughly
  2. Refrigerate for 1-2 hours to allow flavors to meld
  3. Preheat large skillet on medium high heat
  4. Add vegetables to pan and squeeze 1-2 tablespoons of fresh lime juice over them
  5. When vegetables begin to soften, add shrimp and cook until pink (do not over cook shrimp)
  6. Serve immediately with your favorite toppings including fresh guacamole, salsa, shredded jack cheese, and corn tortillas.
