Vegan Pozole Verde
Ingredients
  • 1 cup dry white beans
  • 1 cup dry white hominy corn
  • 2 tsp . olive oil
  • 1/2 onion diced
  • 2 cloves of garlic minced
  • 4 cups vegetable broth
  • 4 tomatillos
  • 1 handful of cilantro
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
For the Garnish
  • Avocado
  • Cilantro
  • Scallions
  • Pepitas
  • Lime
Instructions
  1. Soak beans and hominy corn overnight
  2. Rinse and drain beans and hominy before cooking
  3. In a food processor, process tomatillos and cilantro until smooth
  4. Sauté onions and garlic in olive oil in a large saucepan until soft (do not brown)
  5. Add vegetable broth, tomatillo mixture, salt, pepper, and oregano and simmer approximately 1 hour
  6. Serve with fresh avocado, cilantro, scallions, pepitas and a squeeze of lime
