Boil juice in a pot
Empty the contents of the gelatin into a medium bowl
Pour the boiling water over the gelatin and whisk until completely dissolved. Set aside to cool down to warm room temperature; about 30 minutes
Allow yogurt and cream to warm to room temperature
When the gelatin is at room temperature, whisk in the yogurt and cream until combined
Divide the mixture evenly into glasses and refrigerate until set, 2 to 3 hours or overnight
Garnish with fresh fruit and whipped cream, if desired
