In large bowl, crush the Pop-Tarts. Mix in the cream cheese.
Use a small ice cream scoop to make balls with mixture, rolling them in your hands to make them round. Place on a baking sheet lined with parchment paper. Bottoms will flatten slightly.
Melt the white candy melts with the coconut oil until very smooth.
Using a fork, dip cake balls into melted mixture. Let rest on baking sheet, flattened side down.
TRICK: Dust half of them with citric acid for a shocking sour twist.
Allow to harden at room temperature or in refrigerator.
The blue candy melts will be the irises of the eyeballs. They have a flat side and a rounded side; the flat side will adhere to the flat side of the eyeball. Using a sharp paring knife, shave down the rounded side a bit to flatten it.
Using a dab of the melted white candy mixture, adhere a candy eyeball to the center of the rounded side of the blue candy melt.
Using a dab of the melted white candy mixture, adhere the flat part of the blue candy melt to the flat part of the cake pop.
Draw veins with the red marker.
