Recipe: Strawberry Gazpacho Soup
Ingredients
  • 2 pounds of Fresh California Strawberries washed, hulled, and sliced
  • 2 Roma Tomatoes seeded and chopped
  • 2 cloves garlic chopped
  • 1 English Cucumber chopped
  • 1/4 cup red wine vinegar
  • salt & pepper to taste
  • Garnish:
  • 1/2 Red Pepper finely chopped
  • 2-3 Green Onions finely chopped
  • 1/4 English Cucumber finely chopped
  • 5-6 California Strawberries finely chopped
  • A drizzle of Olive Oil
Instructions
  1. To make the gazpacho soup, simple combine all ingredients in a blender or a food processor
  2. Combine all chopped ingredients for the garnish in a separate bowl
  3. Serve soup chilled
  4. Top with garnish and a drizzle of olive oil
