Salmon Soup
Ingredients
  • 1/2 onion chopped
  • 2-3 carrots peeled and chopped
  • 1-2 stalks of celery chopped
  • 32 ounces Vegetable Broth I opt for the low sodium variety
  • 6-8 ounces of Flat Rice Noodles I prefer my soup with a lot of noodles!
  • 1 pound of Salmon thinly sliced
  • salt/pepper to taste
  • Soy Sauce to taste
  • Splash of Lime Juice
  • Garnish:
  • Sliced Ginger
  • Fennel fronds
Instructions
  1. Sauté vegetables in 1-2 tablespoons of Olive Oil
  2. Add vegetable broth
  3. Add noodles and allow to cook approximately 5-7 minutes
  4. Add sliced salmon and cook approximately 5 more minutes, or until the fish is done
  5. Garnish with sliced ginger and fennel fronds
