Breakfast Stuffed Rooster Potatoes Recipe (With a Vegetarian Option)
Ingredients
  • 1 Albert Bartlett Rooster Potato
  • 1 Tablespoon Corned Beef chopped
  • 1 Tablespoon Onions chopped
  • 1 Quail Egg
  • Vegetarian Option:
  • 1 Albert Bartlett Rooster Potato
  • Tomato chopped
  • Goat cheese crumbles
  • 1 Quail Egg
Instructions
  1. Sauté chopped corned beef and chopped onions in a teaspoon of olive oil until soft
  2. Cook Quail egg over medium
  3. Pierce potato with a fork and microwave for 3-4 minutes, or until soft.
  4. Lightly butter and sprinkle sea salt on potato
  5. Make a small cross cut in the center of the potato and squeeze gently to open it up
  6. Place a spoonful of the corned beef and onion mixture inside the potato
  7. Top with cooked egg
  8. Serve Warm
  9. Vegetarian Option:
  10. Pierce potato with a fork and microwave for 3-4 minutes, or until soft.
