Pastry Cream
Ingredients
  • 3/4 cup half and half
  • 3 tbs sugar
  • 2 tbs flour
  • 1/8 tsp salt
  • 2 large egg yolks
  • 1/2 tsp vanilla extract
Instructions
  1. In a saucepan over low-medium heat, warm milk (do not boil)
  2. In a medium bowl, whisk sugar, flour, and salt
  3. Add egg yolks to flour mixture and combine until it forms a paste
  4. Add some of the warmed milk into the egg mixture and whisk to combine
  5. Continue adding milk to the mixture, whisking to combine
  6. Add mixture back into saucepan
  7. Over medium heat, whisk mixture continuously until it thickens
  8. When bubbles start to form, remove from heat
  9. Strain, if desired
  10. Stir in vanilla
  11. Cover with plastic wrap against the pastry cream to prevent a skin from forming
  12. Chill before serving
