One Skillet Three Cheese Vegetarian Lasagna
Ingredients
  • 1/2 yellow onion diced
  • 2 cloves of garlic minced
  • 1 T olive oil
  • 2 Roma tomatoes diced
  • 1 1/2 cups Ragù® Hearty Traditional Sauce
  • 1 1/2 cups water
  • 6 Lasagna noodles broken into 2-inch pieces
  • Dash of salt and pepper to taste
  • 3 cups of fresh spinach
  • 3/4 cup ricotta cheese
  • 1 egg
  • Dash of nutmeg
  • 1/2 cup mozzarella cheese
  • 2 T parmesan cheese
  • 3 fresh basil leaves chopped and divided
Instructions
  1. Sauté onion and garlic in olive oil until soft but do not brown
  2. Add tomatoes and 1 fresh basil leaf (chopped) and cook until soft
  3. Add Ragù® Sauce and water and bring to a boil
  4. Stir in uncooked noodles (may add an additional 1/2 cup of water if the mixture looks too dry)
  5. Cover and cook over medium heat 15 minutes, or until noodles are tender (stir frequently to keep noodles separated)
  6. While dish is cooking, combine ricotta cheese with one egg and a dash of nutmeg
  7. Top noodles with spoonfuls of ricotta cheese and sprinkle dish with mozzarella cheese
  8. Cover and simmer approximately 5 minutes or until the cheeses are melted
  9. Garnish dish with freshly grated Parmesan cheese and 2 basil leaves (chopped)
  10. Serve immediately
  11. Tip Place the oven-safe skillet under your broiler (on low) for 3-5 minutes in place of melting the cheese over the stove for an oven-baked appearance and taste
