Skillet Strawberry Cobbler
Ingredients
For the Filling
  • 16 ounces of fresh strawberries rinsed, hulled, and sliced
  • 1 Tbs organic sugar may need more, depending on how sweet the berries are
  • 1 Tbs unbleached all-purpose flour
  • 1 Tbs fresh lemon juice
  • 1/2 tsp vanilla extract
For the Topping
  • 1 cup unbleached all-purpose flour
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 Tbs organic sugar
  • Pinch of salt
  • 4 Tbs unsalted butter
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla extract
For the Fresh Whipped Cream
  • 1 cup of heavy whipping cream
  • 1 T powdered sugar
Instructions
For the Filling
  1. Combine strawberries with lemon juice, 1/2 teaspoon vanilla extract, 1 tablespoon sugar, and 1 tablespoon flour and set aside
For the Topping
  1. Combine flour, baking soda, baking powder, sugar and salt into a small bowl
  2. Cut in butter and combine until a crumbly mixtures forms
  3. Whisk egg, buttermilk and vanilla extract together in a small bowl
  4. Add egg/buttermilk mixture to dry ingredients and stir to combine
For the Cobbler
  1. Preheat oven to 375°F
  2. Spoon strawberries into bottom of cast iron skillet
  3. Top strawberries with spoonfuls of dough
  4. Bake for 30-35 minutes, or until topping has browned
  5. Allow to cool before serving, as cast iron skillet with be very hot
For the Fresh Whipped Cream
  1. Using a stand mixer, whip cream and powdered sugar together until thick and soft peaks have formed
  2. Serve Skillet Strawberry Cobbler with Fresh Whipped Cream
