Skillet Strawberry Cobbler
Ingredients
For the Filling
16
ounces
of fresh strawberries
rinsed, hulled, and sliced

Tbs
organic sugar
may need more, depending on how sweet the berries are

Tbs
unbleached
all-purpose flour
1
Tbs
fresh lemon juice
1/2
tsp
vanilla extract
For the Topping
1
cup
unbleached
all-purpose flour
1/4
tsp
baking soda
1 1/2
tsp
baking powder
2
Tbs
organic sugar
Pinch of salt

Tbs
unsalted butter
1
egg
1/2
cup
buttermilk
1/2
tsp
vanilla extract
For the Fresh Whipped Cream
1
cup
of heavy whipping cream
1
T
powdered sugar
Instructions
For the Filling
Combine strawberries with lemon juice, 1/2 teaspoon vanilla extract, 1 tablespoon sugar, and 1 tablespoon flour and set aside
For the Topping
Combine flour, baking soda, baking powder, sugar and salt into a small bowl
Cut in butter and combine until a crumbly mixtures forms
Whisk egg, buttermilk and vanilla extract together in a small bowl
Add egg/buttermilk mixture to dry ingredients and stir to combine
For the Cobbler
Preheat oven to 375°F
Spoon strawberries into bottom of cast iron skillet
Top strawberries with spoonfuls of dough
Bake for 30-35 minutes, or until topping has browned
Allow to cool before serving, as cast iron skillet with be very hot
For the Fresh Whipped Cream
Using a stand mixer, whip cream and powdered sugar together until thick and soft peaks have formed
Serve Skillet Strawberry Cobbler with Fresh Whipped Cream
