Leftover Mascarpone Mashed Potato Waffles
Ingredients
  • 1/2 cup flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 2 cups mascarpone mashed potatoes
  • 2 eggs
  • 1/4 cup buttermilk
  • 2 T mascarpone
  • 2 T butter softened
  • 2 cloves of garlic minced
  • 1/4 cup scallions diced
Instructions
  1. Combine dry ingredients in a medium-sized bowl
  2. In a separate bow, beat eggs into mashed potatoes
  3. Fold in dry ingredients
  4. Add buttermilk, mascarpone and butter and mix until combined
  5. Fold in minced garlic and scallions
  6. Preheat waffle iron
  7. Cook waffles according to your waffle maker's instructions
  8. Serve with mascarpone and fresh scallions
  9. Tip: Do not overfill waffle maker
