Skillet Potato Hash
Ingredients
  • 2 T butter
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 3 red potatoes chopped
  • 6 Yukon gold potatoes chopped
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cup Del Monte Whole Kernel Corn drained
  • 2 eggs
  • Diced green onions for garnish
Instructions
  1. Melt butter in a skillet over medium heat
  2. Add onion and garlic, and sauté for 5 minutes, stirring occasionally
  3. Add red and Yukon gold potatoes, rosemary, paprika, salt and pepper and cook until potatoes are soft, stirring occasionally
  4. Stir in corn and cook until heated through, about 5 minutes
  5. Press hash into an even layer with spatula and use the back of a spoon to make two 1-inch deep wells into the mixture
  6. Crack an egg into each well
  7. Cover skillet and cook until eggs are set, about 5 mintues
  8. Garnish with fresh green onions.
