Homemade Blueberry Flax Granola
Ingredients
  • 2 cups rolled oats
  • 3/4 cup pecans
  • 1/4 cup pepitas
  • 2 T flaxseed
  • 1/4 cup sunflower oil
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup dried blueberries
Instructions
  1. Preheat oven to 350°F
  2. Line a baking sheet with wax paper
  3. Combine rolled oats, pecans, pepitas and flaxseed in a large bowl
  4. Combine sunflower oil, maple syrup and vanilla extract and pour over oat mixture, Toss and ensure entire mixture is coated well
  5. Spread mixture evenly onto wax paper
  6. Bake at 350°F for 18-20 minutes, stirring once halfway through cook time
  7. Allow to cool
  8. Mix in dried blueberries
  9. Serve with milk
