Rockin’ Recipes: Tuna Potato Salad

With summer in full swing, many of you may be hosting barbecues, picnics, and parties.  This week, Chef Scott Leibfried shows us a twist on a traditional favorite…Tuna Potato Salad.  This dish is a good source of Omega3′s and Protein, and low in calories and fat.  I really like that spices, herbs, mustard and vinegar take the place of mayonnaise.

INGREDIENTS:
1 can (5oz) Bumble Bee Prime Fillet Solid White Albacore in Water, drained and chunked
1 medium red potato, cooked and sliced
1 medium white or red potato, cooked and sliced
5 tablespoons white balsamic vinaigrette or your favorite dressing
3 teaspoons country Dijon mustard
1 tablespoon chopped fresh dill
¼ medium red onion, thinly sliced
salt and pepper , to taste
4 large iceberg lettuce leaves
1 tablespoon chopped fresh basil

DIRECTIONS:
Boil sliced potatoes until cooked tender.  In a large bowl, combine two (2) tablespoons of the balsamic vinaigrette with mustard, dill, red onion, salt and pepper.  Add sliced potatoes and toss until completely coated.  Place lettuce on plate and pour vinaigrette to coat, add the potato salad and top with albacore tuna.  Drizzle remaining vinaigrette over to finish tuna potato salad and top with fresh chopped basil.

In the coming weeks, I have at least 3 parties to plan..and I am aiming to do some of the food preparation myself.  Since our summers are extremely warm, I try to serve “cold” foods when entertaining. I like to transform ordinary salads into meals. And that’s just what Chef Scott Leibfried does with his two tuna-themed recipes:  Salmon and Cucumber Salad and Italian Tuna Salad.

Break Up the Monotony of Boring Lunches With These Gourmet Recipes

When it comes to meals that I have to cook, simple is preferable.  I’m never been particularly savvy in the kitchen and juggling two small children just complicates things.  I strive to offer home-cooked meals made from natural ingredients.  Because we don’t eat any red meat or pork, I’m always looking for innovative ways to prepare meals that are wholesome, palatable, and easy to prepare.

Lunch is perhaps the most difficult meal in our household.  I could eat a sandwich every day and never get bored. It’s super easy  to open a can of tuna, toast some bread and chop up some veggies.   But the same does not hold true for the rest of my family.  Here are a few gourmet tuna recipes from Bumble Bee Foods that can be made quickly for lunch:

Zesty Tuna Torpedoes

Ingredients:
2 cans or pouches (5 oz) Bumble Bee® Tuna, drained and flaked
3 tablespoons chopped black olives
4 medium russet or baking potatoes
1 tablespoon olive oil
½ cup pizza sauce
1 cup shredded pizza cheese blend (cheddar and mozzarella)

(Substitute Rice or Veggie Shreds if you have a dairy or egg allergy)
DIRECTIONS:
Preheat oven to 375°F. Bake potatoes for 45 minutes or until tender. Set aside. Increase oven temperature to 450°F. Cut potatoes in half lengthwise. Scoop out potato, leaving ¼” shell. Brush both sides of shell with olive oil and place on baking sheet. Bake at 450°F for 5 minutes until crisp. Remove from oven and fill with pizza sauce, tuna and cheese. Bake at 450°F for 10 minutes and cheese is melted.

Serves 4.

Nutrition Information: For one serving (270 g) – Calories 350 (from Fat 120), Fat 13 g (Saturated 6 g), Trans Fat 0, Cholesterol 55 mg, Sodium 620 mg, Total Carbohydrate 32 g, Fiber 4 g, Sugars 3 g, Protein 27 g

Pizza Margherita Style

Ingredients:
1 can (14.75 oz) Bumble Bee® Salmon, drained and flaked (remove skin & bones as desired)
1 (12”) Italian bread shell for pizza crust, pre-baked
1 teaspoon olive oil
1 teaspoon Italian seasoning blend
2 medium tomatoes, sliced ¼” thick
1 package (8 oz.) fresh mozzarella slices (10-12 slices)
½ cup fresh basil leaves
1 cup shredded Parmesan cheese

(Substitute Rice or Veggie Shreds if you have a dairy or egg allergy)
DIRECTIONS:
Preheat oven to 450°F. Place pizza shell on lined baking sheet, brush with olive oil. Sprinkle Italian seasonings on flaked salmon to coat. Place seasoned salmon, tomatoes, mozzarella and basil evenly around pizza crust. Top with parmesan cheese. Bake for 10 minutes or until cheeses are melted and pizza is heated through. Serve with crushed red pepper and grated Parmesan cheese as desired. Makes 8 slices.
Nutrition Information: For one serving (359 g) – 2 slices Calories 690(from Fat 250), Fat 28g (Saturated 15g), Trans Fat 0, Cholesterol 190mg, Sodium 1440 mg, Total Carbohydrate 52g, Fiber 3g, Sugars 4g, Protein 54g.

Bumble Bee’s Tonno in Olive Oil

Because I’m a bit of a healthy nut (just ask my husband), I tend to be very particular and purposeful about the foods I purchase.  That’s not to say that I won’t indulge every now and then.  But for the most part, I stick to all-natural foods.  I don’t eat beef, pork, or any type of dark meat (i.e. poultry) so I’m a bit limited as far as my sources of protein.  I rely a lot on fish because it is a great source of Omega-3 fatty acids.

Before the scare of mercury in fish, tuna sandwiches were a regular part of my diet (it was not uncommon for me to have one or two servings a week).  I’ve since cut back, due to the nursing baby, but I still find tuna to be the easiest (yummiest) way to get in protein and Omega-3 fatty acids.  My favorite way to eat tuna is simply with a little sour cream and some whole wheat crackers or bread.  But as a member of the Bee Squad, I’ve been challenged to step it up a bit and try different products and recipes using tuna.

As a member of the Bee Squad, I receive products to sample, courtesy of the company.  I’ve been holding off to try their Tonno in Olive Oil simply because I’ve always been somewhat opposed to eating tuna in oil.  My thought was, why add extra fat and calories?  But, I’m willing to try a lot of things (even if I don’t end up eating them regularly) so I tried their Tonno in Olive Oil last week with my husband.  It’s simply light tuna, olive oil, and salt (in that order).  Don’t you love products with ingredients you understand?  The can, which is 2 servings, provides 110 calories, 5 grams of fat, 1 g of saturated fat, 0 g of trans fat, 30 mg of cholesterol, 220 mg of sodium, and 15 g of protein (wow!).

As far as taste is concerned, I didn’t really notice much of a difference.  In other words, it still tasted like tuna.  But I found it to be much moister than, say, their light tuna in water.  My husband, who always eats tuna with mayonnaise, ate it from the can without adding anything to it. It’s packed in olive oil, so I’m not concerned about the added fat or calories.  You could easily make a sandwich and not have to add mayonnaise, because it’s not dry like other types of tuna. Overall, I think the best use of this would be in a recipe (at least for my own personal use).  I ike to add something to my tuna and combining sour cream with this tuna would just make it unnecessarily high in fat and calories.

BeeWell For Life

One of my goals for this year (and every year) is to eat healthier foods and increase my level of physical activity.  And I hope that one of the results is to shed this baby weight.  Bumble Bee Foods has launched a site called BeeWell for Life. The site is the new home of the BeeWell Miles program.  On it you’ll find resources “to make fitness and nutrition fun, rewarding, and fulfilling.”  The site is geared not only to your body but to your mind and spirit as well.

I signed up for the site as an incentive to get active.  It also provides a physical log of both my food intake and activity to see where I need to improve. The site offers much in the way of support and information for getting healthy…bothy physically and mentally.  You’ll find a community you can join for fitness tips, nutrition questions, or simply to make a new friend. My favorite part of the site is the area where Stephanie and Willow, two registered dietitians, share menus and recipes.  Here is their latest (which I am planning on making in the next week or so):

INGREDIENTS:

1 can or pouch (5 oz) Bumble Bee Tuna, drained and flaked

½ cup chopped tomato

3 tablespoons low-fat milk

6 large raw eggs, beaten

2 slices Swiss cheese

DIRECTIONS:

Combine tuna, tomato, milk and eggs. Pour tuna and egg mixture into a prepared 9-inch microwave safe casserole.  Cover and microwave on HIGH 90 seconds.  Remove lid, stir, cover and microwave on HIGH about 3 minutes longer.  Stir at 1 minute intervals until barely firm. Preheat broiler.  Place cheese slices on top of eggs and broil to melt  as desired.

My Favorite Tuna Recipe

When I delivered my son two years ago, my husband asked me what I wanted once I was able to eat after the c section.  Without question I wanted a tuna sandwich from Islands.  For some reason, I just seem to crave tuna when I’m pregnant.  But because I have to limit the amount of seafood I consume, I only get to eat it several times a month (when I’m not pregnant I eat it at least 2 times a week).

There are numerous ways to prepare tuna salad.  But my favorite is one that I tried at a gourmet sandwich shop years ago.  I don’t have the same exact recipe that they used, but this one comes pretty close.  What makes it taste so good is the replacement of sour cream for mayonnaise.

    - 2 small cans of White Albacore Tuna in Water
    - 1/3 cup Dried Sweetened Cranberries
    - 2/3 cup chopped Fuji Apples
    - 1 Tbsp. Lemon Juice
    - 2 Tbsp. minced fresh Dill
    - 1/2 cup Sour Cream
Another thing I like to add to the tuna salad is walnuts.  The lemon juice helps keep the apples from turning brown.  You can also adjust the amount of sour cream depending on how you like your tuna salad.  What’s even better is to serve on toasted whole grain bread.
