Putting a Little Spice In Our On-The-Go Recipes! Published on Tuesday, August 16, 2011 by

While my husband and I have made it a priority to at least eat dinner together as a family, both of us have busy, traveling, and often conflicting work schedules that preclude us from eating most meals together. Between playdates, day trips, and appointments, we’re often eating on the go. The amount of “fast food” we consume is very minimal so very often I’ll prepare something quick before we head out.  Since we know that sandwiches can get rather dull and repetitive, Aracely, Liz, Laura, Natalie, Katie and I got together with a little inspiration from Lawry’s to create 3 healthy, flavorful, on-the-go recipes.  Using Lawry’s Ginger Sesame Marinade, Seasoned Salt, Teriyaki Marinade with Pineapple Juice, Balsamic Herb Marinade, and Seasoned Salt Marinade we created the following dishes…

Sesame Ginger Chicken Salad by OC Mom Activities and Rockin’ Mama

Ingredients:
2 lbs. of boneless chicken breast
1 cup of Lawry’s Ginger Sesame Marinade
1- pack of your favorite fresh Green Salad
1- fruit cup of Mandarin Oranges
Whole Baby tomatoes to taste
Slivered Almonds to taste
1/4 cup of Sesame Ginger Salad Dressing
Shredded Carrots to taste

Directions:
In a resealable plastic bag, marinate the chicken in Lawry’s Ginger Sesame Marinade and refrigerate for 30 minutes (if you have time, I highly recommend letting it marinate over night for even more flavor). Then cook on the  grill (or on a counter-top grill if you are in a hurry). Once cooked, slice chicken into cubes and add to fresh greens. Top with mandarin orange slices, whole baby tomatoes, shredded carrots, slivered almonds and top with the Sesame Ginger Salad Dressing.

Mexican Potato Salad by Daytripping Mom and Thoughts of a Mommy

Ingredients:

5 lbs. of Potatoes

1 package of Chorizo, cooked and drain from oil

1 bunch of cilantro, finely chopped (separated some for toppings)

10 hard boiled eggs, chopped

1 finely chopped onion

1/2 cup of mayo

Lawry’s Seasoned Salt to taste.

Pepper to taste

Directions:

Peel and chop (into small sized cubes) potatoes and boil in water for about 15 minutes. Include 1 teaspoon of Lawry’s Seasoned Salt to add a tiny bit of flavor. Once boiled, drain and place potatoes to cool in the fridge for at least 1 hour. In a mixing bowl, combine cooled potatoes, mayo, eggs, cilantro, chorizo, onions and mix till all ingredients are well mixed. Add additional Lawry’s Seasoned Salt to taste.

Polynesian Sliders by LA Story and Mommy of a Monster & Twins

Ingredients:

1 pound lean ground beef

1/2 cup Lawry’s Teriyaki Marinade With Pineapple Juice , divided

1 cup finely chopped red bell pepper

4 pineapple slices

10 mini hamburger rolls, toasted

Directions:

1. Mix ground beef, 1/4 cup of the marinade and red bell pepper in medium bowl until well blended. Shape into 10 rounded slider patties.

2. Broil or grill over medium heat 4 to 6 minutes per side or until sliders are cooked through (internal temperature reaches 160°F). Meanwhile, broil or grill pineapple slices 1 to 2 minutes per side or until golden brown. Brush sliders and pineapple slices with remaining 1/4 cup marinade while cooking.

3. Serve sliders on toasted rolls with pineapple slices.

Both the marinades and seasoned salt make it quick and easy to flavor foods without a lot of effort.  Despite the fact that these dishes require some prep beforehand, they’re easily made the night before and packed away for a picnic, playdate, or other outdoor adventure.
